Adding too much food to a pan at once — so that pieces touch and steam accumulates — causing the food to steam instead of sear. The Maillard reaction requires a dry, hot surface; a crowded pan generates moisture that keeps the surface temperature below 100°C.

Why Bad
Steam is produced when evaporating moisture from wet food surfaces cannot escape fast enough. This drops the pan temperature and prevents the surface from reaching the 140°C+ required for Maillard browning. The result: grey, soft, and watery food instead of the desired browned, caramelized exterior. Flavor and texture both suffer.
Instead Do
Cook in batches sized so that pieces are in a single layer with at least 1 cm between them. A 28 cm skillet fits about 200 g of mushrooms or 2 medium chicken thighs. Rest cooked batches in a warm oven (80°C) while the next batch cooks. The total cook time is longer but the result is dramatically better.
